Lemon Coconut Protein Balls
These lemon coconut protein balls tick all the boxes of a smart snack: they keep you full, and satisfy sweet cravings.
Serves: 12 balls / Prep time: 10 mins / Bake: 20 mins
Ingredients:
- ½ cup creamy cashew butter
- ⅓ cup desiccated coconut
- ½ cup melted coconut butter
- 5 large Medjool dates
- ½ cup Nuzest Clean Lean Protein Smooth Vanilla
- 30 ml lemon juice
- 1 tbsp lemon zest
Method:
- Add all ingredients to a food processor.
- Blend until the mixture comes together into a dough-like consistency.
- Roll into 12 evenly sized balls.
- Freeze for 20 minutes, then enjoy straight away.
Optional: Drizzle with melted coconut butter and sprinkle with extra lemon zest before serving.
Notes:
- Store in an airtight container in the fridge or freezer.
- If frozen, allow to thaw slightly before eating.
