Flourless Chocolate Blueberry Muffins
Simple ingredients and a quick prep time, these muffins are perfect for busy mornings or an on-the-go snack!
Serves: 12 muffins / Prep time: 8 mins / Bake: 18 minutes
Ingredients:
- 1 cup banana puree
- 3 scoops Nuzest Clean Lean Protein Rich Chocolate
- 1 cup sunflower seed butter or almond butter
- 1/3 cup blueberries
- 3 large eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp thick yogurt
- 1/4 cup syrup of choice (maple, monk fruit, etc.)
- 1/4 cup flaked almonds
- 2 tbsp cacao nibs
Method:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine all ingredients and mix until smooth and well-combined.
- If you want extra crunch, stir in the optional flaked almonds and cacao nibs.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18 minutes, or until a toothpick comes out clean.
- Let cool slightly, then enjoy!
