Choc Chip Walnut Banana Bread
Ripe bananas offer natural sweetness and quick energy, walnuts add healthy fats and fibre for steady fuel, and extra protein keeps each slice satisfying and energising.
Serves: 1 Loaf / Prep time: 8 mins / Bake: 50-55 mins
Ingredients:
- 2 large bananas, mashed
- 1 cup full-cream milk*
- 1 tbsp apple cider vinegar
- 1 tbsp vanilla extract
- 3 scoops Nuzest Clean Lean Protein, Smooth Vanilla
- 1/2 cup coconut sugar or monk fruit
- 1 2/3 cups self-raising flour
- 3 tbsp melted butter or coconut oil
- 1 cup walnuts
- 1/2 cup sugar-free chocolate chips
Method:
- Preheat oven to 180C/350F. Line a loaf pan.
- In a bowl, mix bananas, sugar, milk, vinegar, vanilla, and protein until smooth.
- Add flour; mix until just combined. Fold in walnuts and chocolate chips.
- Pour into pan. Add sliced banana or walnuts on top if desired. Bake 50-55 minutes, or until a skewer comes out clean.
- Cool completely before slicing.
