Cherry Coconut Date Clusters
These clusters balance carbs, fats, and protein for a dessert that works with your body, not against it.
Serves: 18-20 clusters / Prep time: 10 mins / Freeze: 40+ mins
Ingredients:
- 20 large Medjool dates, pips removed
- 1/3 cup dried tart cherries, pre-soaked
- 1/4 cup desiccated coconut
- 4 scoops Nuzest Clean Lean Protein, Smooth Vanilla
- 1/2 cup tart cherry extract (liquid)
- 2/3 cup coconut butter, melted
- 1 cup sugar-free dark chocolate, melted
- 2 tbsp chopped hazelnuts
Method:
- Blend all filling ingredients in a food processor until a sticky dough forms.
- Fill each date with around 1.5 tsp filling. Place on a lined tray and freeze for 40 minutes.
- Mix melted chocolate with hazelnuts, coat each date, then freeze for a further 15 minutes.
- Store in an airtight container in the fridge for up to 2 weeks or freezer for up to 4 weeks.
